Now, the ingredients in the Blue Moose vegan Queso Blanco are, and we quote, “Water, Organic Cashew Nuts, Organic Jalapeno, Organic Tomatoes (Vine-ripened Organic Tomatoes, Organic Tomato Juice, Sea Salt, Calcium Chloride, Citric Acid), High Oleic Organic Sunflower Oil, Non-GMO Nutritional Yeast (Dry Yeast, Niacin, Pyridoxine Hydrochloride, Thiamine Hydrochloride, Riboflavin, Folic Acid, Vitamin B12), Organic Garlic, Sea Salt, Organic Lemon Juice, Non-GMO Citric Acid, Organic Onion, Organic Cumin, Organic Chili Powder.” (Actually pretty darned clean ingredients, we have to say!) Our copycat cashew Queso Blanco doesn’t have a few of those things in it, for example no calcium chloride, no oil, and no citric acid.
Besides not having ingredients that you may not want in your cashew queso, when you make cashew queso at home you get to have exactly the ingredients that you do want in it, and in the proportions that you want! (The same goes for our Copycat Bitchin’ Sauce.) So when we say “1 teaspoon of minced garlic”, you can use more, less, or none at all, it’s up to you!
Copycat Blue Moose Cashew Queso
Ingredients

1 cup “raw” (not roasted) cashews (cashews sold as “raw” have actually been subjected to heat to remove the shell)
1 cup boiling or very hot water
1 teaspoon minced garlic
3 Tablespoons nutritional yeast
1/4 cup diced tomato (very optional)
1/2 to 1 teaspoon minced jalapeño (optional)
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon onion powder
1/4 teaspoon salt
Directions
Put the cashews in the pitcher of a high-speed blender, and cover with the water. Allow to stand for 20-30 minutes, or until the water is lukewarm.
Add the rest of the ingredients and process at low speed until everything is blended, then start increasing the speed until you are at full speed; continue to blend until all the ingredients are fully incorporated and very smooth.
Quickly pour into your bowl or serving dish (quickly because that is when it’s easiest to pour, as it will thicken as it cools). Store in refrigerator in a covered container.
