Here are the directions for the PlantStrong pancake and waffle mix (you’d be forgiven for assuming it’s “Plant Strong”, rather than the portmanteau of the two). Finding a truly gluten-free and also truly vegan pancake mix is not easy, especially when so many of them then include adding eggs in the directions.

Of course you can substitute a flax egg or an egg replacer, but, feeling lazy, we were looking for a gluten-free vegan pancake mix that required only adding liquid things (plant milk or water, and maybe some oil). We found two different gluten-free and vegan pancake mixes that met that criteria, Chelsea Approved, and PlantStrong.
Having stumbled across the PlantStrong brand pancake and waffle mix purely by serendipity, we went to their website to see what they were about. Imagine our surprise and delight to discover that they have a gluten-free vegan pancake mix that is also organic!
The ingredients for this unicorn pancake mix are whole oat flour, cassava flour, whole buckwheat flour, whole sorghum flour, organic dates, leavening (monocalcium phosphate, baking soda), and xanthan gum.

The ingredients for the Chelsea Approved brand are buckwheat flour, cane sugar, baking soda, citric acid, and sea salt. However what the Chelsea Approved brand lacks in flour diversity they make up with including … you know … directions on their website so you can know what you’re getting into.
We actually have ordered both, to do a comparison, and we may write that up (would you like us to write it up?)
Anyways, we looked all over the PlantStrong site, and specifically the product page for the PlantStrong pancake and waffle mix, for the directions for making the PlantStrong pancakes, and couldn’t find them anywhere! We even engaged their chatbot hoping to be pointed to the directions (the chatbot said they would email us back in a few hours – picture us rolling our eyes here).
Our minds were full of questions. What were those directions? Where were those directions? Did they include a ‘gotcha’ of having to use eggs or an egg substitute? Did they need oil? And most importantly, why aren’t the directions right there on the product page on the website??
So, we went to the Internet and searched for the directions for making the PlantStrong pancake mix (but we shouldn’t have had to), and we are giving them to you now (so you don’t have to).
Directions for Making the PlantStrong Pancake and Waffle Mix
Here are the directions, transcribed from the package:
Combine 1 cup PlantStrong pancake mix with 1 cup water or plant-based milk. Add more or less liquid for desired consistency.
For pancakes: Heat a non-stick skillet over medium heat, or set electric griddle to 375°. Pour desired pancake size. Cook until bubbles form. Flip and continue cooking until golden brown.
For waffles: Pour into waffle iron. Cook until golden brown.
