You will not believe how delicious this quick salad dressing is (you also won’t believe how quickly you can whip it up)! We call this a “vegan Costco” recipe because nearly all of the primary ingredients come from Costco (although of course you can get them elsewhere as well).

We use the Wholly Avocado brand organic smashed avocado cups from Costco to make this (not the guacamole cups, but the plain avocado and sea salt cups). If you don’t have these cups though, fear not, you can smash up your own avocado instead. Each Wholly Avocado cup is 1/4 cup, so if you are using your own mashed avocado, that’s how much you will need (1/4 cup).

The one thing about this dressing is that you will likely want to use it up while it’s fresh (which is easy to do because it’s so darned yummy!) For some reason, after even just an overnight in the fridge, the vinegar, which is in perfect balance when the dressing is first made, becomes a dominant flavor when the dressing sits overnight. Now, you may actually like that! So that’s up to you – just be forewarned that you will end up with a different tasting dressing if the dressing is allowed to develop for several hours.

This dressing recipe is also very flexible. For example, we use a light vinegar, such as a rice or champagne vinegar, but if you want to try it with ACV or balsamic, go for it! Don’t like dijon mustard? Try a different kind of mustard, or omit it altogether. That’s part of the beauty of mixing up your own dressing – not only is it incredibly fresh, but you can customize it however you like!

Quick and Delicious Green Salad Dressing

Ingredients

1 2-ounce container Wholly Avocado smashed avocado (we get this from Costco in boxes of 16), or 1/4 cup mashed avocado
3 Tablespoons olive oil (we get organic olive oil from Costco)
1 Tablespoon light vinegar, such as rice or champagne vinegar
1 Tablespoon lemon juice (we use Italian Volcano organic lemon juice from Costco)
1 teaspoon maple syrup (we use Kirkland organic maple syrup from… you guessed it, Costco)
1 Tablespoon water
1 teaspoon dijon mustard
salt and pepper to taste

Directions

In a small bowl, mix the avocado and olive oil until mostly fully incorporated. Add all of the other ingredients and whisk until smooth and creamy.

This dressing is so delicious that if you’re anything like us, you will find yourself thinking of all sorts of other things you can use this it on besides salad – you may even find yourself wanting to eat it with a spoon. :~) Go ahead, because it’s full of healthful ingredients.
