Also, this is one of our vegan Costco recipes! We call it that, in honor of our vegan Costco Facebook group, because it relies on ingredients that we typically get from Costco, but of course you don’t have to use ingredients from Costco, and you can find them anywhere.
You know, here’s a thing: this recipe is so easy and straightforward that it’s actually hard to get it up to the 400+ words that Google generally requires in order to be found in Google search results. (In case you weren’t aware, part of the reason that most recipe sites make you go through pages and pages of descriptions, explanations, advice, digressions, stories, and other fillers, is because they need to do that to satisfy Google, both Google’s search algorithms and for Google ads, including those horrible pop-up video ads that are so common on recipe sites now.)

Quick and Easy Pumpkin Tomato Bisque
Ingredients
1 15-ounce can plain tomato sauce (we use the organic tomato sauce from Costco)
1 15-ounce can plain coconut milk (we use the organic coconut milk from Costco)
1 15-ounce can plain pureed pumpkin
1/2 teaspoon ground ginger
1/8 to 1/4 teaspoon cayenne pepper
1/2 teaspoon salt
Directions
Stovetop
Combine everything in a pot and heat over medium-low heat until just simmering, stirring frequently.
Microwave
Combine everything in a large, microwavable bowl. Heat 1 minute at a time, stirring after every time, until hot.
Optional
Stir 2-4 Tablespoons peanut butter into the hot bisque, stirring until it has melted and become fully incorporated (we use the all natural organic peanut butter from Costco).
