    Craving empanadas but they have to be gluten-free vegan empanadas? Our mock empanadas will hit the spot! Why do we call them "mock empanadas"? Well that's part of why they are fast and easy! Our mock empanadas are made with almond tortillas, specifically the Siete almond flour tortillas that one can get at Costco (although of course you get them elsewhere as well, including on Amazon).     Vegan Gluten-Free Pineapple Upside-Down Cake – Perfect for Picnics and BBQs!
    Our vegan, gluten-free pineapple upside-down cake recipe is the perfect gluten-free pineapple dessert! Many of us have fond memories of sitting outside in the warm sun at a Memorial Day picnic or 4th of July barbecue, digging in to generous helpings of pineapple upside-down cake.     Not Dogs – Easy Tofu Dogs Vegan Hot Dog Recipe
    Our recipe for Not Dogs tofu dogs is our favorite vegan hot dog recipe and, it turns out, our favorite gluten-free vegan hot dogs of all. (But they are not copycat Tofu Pups, because the ingredients are much cleaner.) If you are a regular reader of the Happy Gluten-Free Vegan, you already know that we recently completed our head-to-head review of the three brands of gluten-free vegan hot dogs that are available to purchase in store or online; those are Moving Mountains, Yeah Dawg, and Sweet Earth. Of those three, Sweet Earth was the clear winner for flavor and texture, while Moving Mountains was the clear winner for clean ingredients and being intentionally vegan, and Yeah Dawg was the only one that was intentionally both gluten-free and vegan, but they failed in the flavor and texture department. You know that old saying "if you want something done right you have to do it yourself"? We wanted a gluten-free vegan hot dog that had clean ingredients, good flavor, and good texture. Regardless of what you call them, Yeah Dawg is one of three brands of gluten-free vegan hot dogs available on the market: Yeah Dawg, Sweet Life, and Moving Mountains. Lightlife is not gluten-free, although they are headed in that direction (we have that straight from Lightlife, who cautions that while they are phasing out gluten, there is still stock out on the shelves that contains gluten).

    This is the second in our series of reviews of vegan hot dogs that are also gluten-free. Sweet Earth hot dogs are not intentionally gluten-free, and maybe not even intentionally vegan, but happily they are both vegan and gluten-free.     We start off our review series of gluten-free vegan hot dogs (also called frankfurters or franks) with Moving Mountains brand vegan hot dogs. These are gluten-free by accident, meaning that Moving Mountains didn't set out to intentionally create a hot dog that was gluten-free as well as vegan, but create it they did. While Moving Mountains started out in 2016 by creating vegan hamburgers (not gluten-free), and added vegan hot dogs (yay, gluten-free!) to their repertoire in 2019.

    Our chocolate chip raw cookie dough protein balls are easy and fun to make, and have lots of flavor and plenty of protein.     Move Over Coconut Bacon – Gluten-Free Vegan Soy Curl Bacon is in the House!
    Our recipe for gluten-free vegan Soy Curl bacon hit us like a bolt out of the blue (only way less painful). Vegan bacon from Soy Curls?? Why the heck not? We had recently posted our wildly popular recipe for Soy Curl pastrami, and so it wasn't really a stretch to go from pastrami to bacon. Of course vegan bacon is something of a holy grail. There are lots products on the market that call themselves vegan bacon, and even more recipes for vegan bacon, most involving coconut, tempeh, seaweed, and even the aptly named seitan (oh hush, if you need to be gluten-free you know what we mean). But bacon from Soy Curls beats them all (at least we think so), because it has the flavor, it has the nutrition, and it has the CRISP!

    Tofu Cooked on a Salt Block (Plus Another Awesome and Easy Tofu Marinade!)
    Wondering what to do with that Himalayan salt block that someone gave you for Christmas years ago? Cooking tofu on a salt block makes wonderful, delicious tofu! Of course we think tofu is wonderful anyways, but in case you're on the fence, this is how to make tofu taste good. (Plus we include an awesome 4-ingredient marinade for tofu!) Some people have a hard time wrapping their head around cooking on a block of salt; it helps to understand that you are basically using the salt block as a griddle (and it will be just as hot as a griddle). While salt block cooking is typically thought of in the context of meat and grilling, cooking tofu on your big old block of salt, on your stove top in your kitchen, yields a tofu unlike any other.

    No matter what you call it ('halva', 'halvah', "halava", or "halavah"), vegan halvah is the holy grail of halvas for many people. If you, as we, grew up eating Joyva brand halvah, you may have been as stunned as were we to discover that Joyva halvah, and many other brands of halva, are not vegan! WTF? That's right! Some brands contain egg white or albumin, others contain honey, and some even have both.

    Our Incredibly Easy and Delicious ‘6 x 1’ Tofu Marinade and Sauce
    We call this easy tofu marinade and sauce our "6 x 1" marinade (pronounced "six by one", or just "six by") because it consists of one tablespoon of each of six ingredients (plus some water). It's super simple, in fact deceptively simple. We say "deceptively" because it's one of those recipes that people will think you spent waaaay more time and effort on than you actually did.     Homemade Vegan Sushi – It’s Easier Than You Think and Even More Delicious (and Pretty) than You Dared Hope!
    If you have been putting off making vegan sushi (or maybe never even thought of making homemade vegan sushi rolls), stop it! It turns out that making vegan sushi rolls at home is really easy! Stymied for vegan sushi filling ideas? Guess what! You can use almost anything as a filling for vegan sushi! Is it authentic? Who cares! It's delicious, and fun! We've used string beans, rehydrated dried mushrooms, and baby corn (because that's what we had on hand), as well as ordering and using more traditional things such as ume. There's even a vegan unagi (eel) sauce you can get to replicate vegan unagi (hey, it's all about the sauce)! On a side note, who here remembers the 'unagi' episode of Friends?     The Best Tofu Marinade and Simple Tofu Recipe
    This awesome tofu marinade works in your air fryer as well as in your oven. It makes tofu cubes that are as versatile as they are delicious, with perfectly done outsides and incredible creamy centers. There are as many marinade recipes for tofu as there are, well, maybe not stars in the sky, but there are a lot of tofu marinade recipes, and we will put this one up against any of them. The secret to this easy, incredible marinade and its fabulous, magical alchemy with tofu is in how you press the tofu, and then letting the tofu marinate for a good long time. For this recipe it is imperative that you use the type of tofu that is found packed in water, in the refrigerated section. We use the House brand tofu from Costco for this, and it's perfect.

    Copycat Vegan Boursin Recipe (Spreadable Herbed Cheese)
    This copycat vegan Boursin recipe is as awesome for snacking on as it is for entertaining! And it's so easy to whip up a batch! Vegan Boursin™️ recently became available at Costco, and it really took the vegan community by storm. But lots of locations still aren't carrying the vegan Boursin, and so that's when we stepped in to create this vegan Boursin copycat! This is truly a "vegan Costco recipe", meaning that at least some of the primary ingredients can be purchased at Costco, as it uses both unroasted "raw" cashews (which we get from Costco), and the juice from sauerkraut (ditto).

    The Best Ever Easy 2-Ingredient Vegan Gluten-Free Flatbread and Pizza Crust Recipe – No Yeast!
    This is seriously the best ever 2-ingredient vegan gluten-free flatbread recipe. It also happens to be the best ever 2-ingredient gluten-free vegan thin pizza crust recipe! It's two, two, two recipes in one! This recipe is so easy, all you need is almond flour and quick-cooking oats. Ok, you also need water, so we guess that technically there are three ingredients, if you count the water as an ingredient. Then, once its cooked, you can either use it as a flatbread (we most recently topped it with homemade pistachio butter, which was out of this world!) or a thin-style pizza crust (see picture).

    Copycat Cocomels: Vegan Coconut Milk Caramels (And They’re Easy to Make with Just 3 Ingredients and No Thermometer Required!)
    Our copycat Cocomel vegan caramels recipe (made from coconut milk) is incredibly easy to make and takes only 3 ingredients! This is our own recipe for vegan caramels, developed after we realized that all of the recipes for coconut milk caramels out there are basically copies of the Saveur recipe (right down to the word-for-word copied "combine the sugar and the water and stir until sugar is wet" instructions). And most of them use use corn syrup, and also some sort of fat (vegan butter or solid coconut oil), and ... water?? WTF? Cocomels don't have that stuff in them! The ingredients for Cocomels are organic coconut milk, organic brown rice syrup, organic dried cane syrup, sea salt, and xanthan gum. Period. The ingredients for our copycat Cocomels vegan caramels are organic coconut milk, organic brown rice syrup, and organic sugar. No xanthan gum. For this recipe we use the organic coconut milk and organic sugar from Costco (but of course you don't have to).

    Our gluten-free vegan baked egg cups (also known as mini frittatas, chickpea frittatas and, we think misleadingly, "vegan frittata muffins" and "baked egg muffins") have a few simple ingredients, but countless ways to change them up! Load them up with fresh veggies, or rehydrated dried veggies, or have them plain with salt and pepper.     We don’t know if there is some sort of cauliflower council that has been brainstorming new ways to promote cauliflower, but it seems to be popping up a lot lately! Low-carb dieters are going crazy for it because it is lower in carbohydrates than potatoes, but we love it simply because is is delicious and nutritious! Cauliflower is chock full of vitamin C, manganese, beta-carotene, vitamin K, omega-3 fatty acids, fiber, and vitamins B1, B3, B5, B6 and B9. For those of you keeping track, that means that cauliflower has antioxidant and anti-inflammatory properties, and is great for digestion.

    Vegan, Gluten-Free Hickory Smoked Tomato Soup with “Cheese”
    This weekend was particularly dreary around these parts and, though it is technically summer, it was perfect soup weather! One of the things we do miss about our non-vegan days is onion soup!     Vegan, Gluten-Free Aged Feta
    We recently brought you a fantastic recipe for vegan, gluten-free feta, which is quick and easy to make! Well we’ve been playing around in the kitchen and took it one step further by slightly aging and pressing the tofu. While the quicker feta will always be our go-to in a pinch, this aged feta is so worth the wait and work! The key to making this feta is to press it for at least 5 days, wrapped in clean towels (we used paper towels, but you can certainly use a lint-free, clean kitchen towel), and changing out those towels daily.

    We thought we’d bring you a recipe for National Celiac Awareness month that contains maple syrup because it can be a wonderful alternative for vegans who prefer to not use honey. We recently were gifted a half-gallon of fresh Vermont maple syrup and have been going a bit crazy with recipes containing this sumptuous sap; any excuse to eat it! We have to stress that, when cooking with syrup, it makes all of the difference to cook with real syrup, not the stuff that is commonly hawked on Saturday morning commercials. A lot of the commercial syrup sold isn’t even true maple syrup at all, it’s just high fructose corn syrup. True maple syrup is a bit more watery than the commercial stuff, and has a much richer flavor.

Obviously there are tons of great non-dairy ice creams available, but there is a great sense of satisfaction in making it yourself. The great thing about making your own ice cream is that you can put whatever you want in it: fruit, candies, nuts, whatever strikes your fancy!

One of our close friends recently had to switch her child to a dairy-free, gluten free diet due to allergies and is now finding herself having to rethink the entire way she prepares food. While many who are vegan and gluten free by choice were able to make a gradual switch to the diet as they learned more about how to cook within the guidelines, people who suddenly have to switch because of dietary issues with their kids are often left scrambling for diet-appropriate foods that will also be kid-approved.

    We were disgusted to learn that the Starbucks Strawberries and Creme frappuccino contains bugs! Yuck! While Starbucks has thankfully announced that they are going to phase out the beetle usage, in favor of tomato-derived lycopene extract, it was a great reminder to us that sometimes it is just better to make treats yourself so that you can control what goes into them.

    Native Foods Cafe Coming to Boulder Soon!
    We are so excited that Native Foods Cafe is coming to Boulder, Colorado soon! The all vegan fast food and vegan comfort food (including gluten-free vegan food!) is currently setting up shop in the location previously filled by Rumbi Grill, at 29th Street Mall next door to the Smiling Moose Cafe. Rumour has it that they will be open by May, and judging by the progress we see whenever we are in the area, we think that is probably right. The Native Foods Cafe Boulder menu is already up by the door, and it looks fantastic. They are set to become the first openly kid-friendly vegan restaurant in Boulder (with a separate child-friendly menu), and they even have separate gluten-free and soy-free menus!     One thing we missed sorely as vegan and gluten free eaters is stroganoff. While we don’t so much miss beef stroganoff, we absolutely love mushroom stroganoff. This is no easy feat to achieve when you are vegan AND gluten free. Well we fell head over heels in love with this recipe from Lux Hippie. Every bite proved to be a delicious dance on our tastebuds. We modified it slightly by substituting our beloved shirataki noodles for the rice noodles, and instead of seitan we used browned mushrooms.

After finding a delicious recipe for vegan Cheese Crisps, using vegan and gluten-free Daiya Cheese (I found the recipe on the Zander's Vegan Mama blog), I felt inspired to add it to my already-planned vegan and risotto-stuffed portobello caps with vegan parmesan cheese.
