The Lazy Vegan’s Guide to the Ninja Creami: We Explain Where Are the Fill Lines and How Hot Should the Hot Water be for Slushies?In case you're not familiar with the Ninja Creami, it works a bit differently from other home ice cream makers. With many home ice cream makers you have to freeze a relatively large, double-walled metal bowl, then put your ingredients in and process it. Of course, you still need your ingredients to be frozen with the Creami, but instead of having to freeze a big old bowl, which you will need to refreeze after you use it before you can make more ice cream, the Creami ingeniously has you freeze your ingredients right in the pint (or "larger pint", depending on which model you get) containers in which you will blend and also store your frozen confections. Fabulous Bircher Muesli Recipe – the Original Healthy Overnight Oats Recipe That Doesn’t Have to be OvernightDid you know that the healthy overnight oats recipe fad is based on the Bircher muesli recipe which is more than a century old? The whole overnight oats recipe fad seems to have exploded on the scene along with Covid, but back in the 1900 (that's no typo) Dr. Max Bircher invented the original overnight oats recipe, and called it muesli. Prescribing it for his patients, Birchermüesli, named after the good doctor, or, simply, müesli, became a staple breakfast food; muesli is a derivation of "mus", which basically translates to "mush". Dr. Bircher's muesli was made by - wait for it - soaking rolled oats, and adding some other yummy stuff to it. The original Bircher muesli recipe involved soaking the rolled oats in water overnight, and then mixing them with milk or cream, some nuts, some lemon juice, and then grating an entire fresh apple into the mixture, stirring and eating. The lemon juice was to keep the apple from browning. Copycat Cocomels: Vegan Coconut Milk Caramels (And They’re Easy to Make with Just 3 Ingredients and No Thermometer Required!)Our copycat Cocomel vegan caramels recipe (made from coconut milk) is incredibly easy to make and takes only 3 ingredients! This is our own recipe for vegan caramels, developed after we realized that all of the recipes for coconut milk caramels out there are basically copies of the Saveur recipe (right down to the word-for-word copied "combine the sugar and the water and stir until sugar is wet" instructions). And most of them use use corn syrup, and also some sort of fat (vegan butter or solid coconut oil), and ... water?? WTF? Cocomels don't have that stuff in them! The ingredients for Cocomels are organic coconut milk, organic brown rice syrup, organic dried cane syrup, sea salt, and xanthan gum. Period. The ingredients for our copycat Cocomels vegan caramels are organic coconut milk, organic brown rice syrup, and organic sugar. No xanthan gum. For this recipe we use the organic coconut milk and organic sugar from Costco (but of course you don't have to). - February 16th

Raw Vegan Gluten-Free Almond Ginger Sushi RollsAlmond lovers and growers are rejoicing with news from the U.S. Department of Agriculture that almonds have around 20 percent less calories than previously thought. It seems that food scientists have found that the way we have been measuring calories for over 100 years may not be very precise in cases where the food is both high in both fiber and fat, such as nuts. Vegan, Gluten-Free Aged FetaWe recently brought you a fantastic recipe for vegan, gluten-free feta, which is quick and easy to make! Well we’ve been playing around in the kitchen and took it one step further by slightly aging and pressing the tofu. While the quicker feta will always be our go-to in a pinch, this aged feta is so worth the wait and work! The key to making this feta is to press it for at least 5 days, wrapped in clean towels (we used paper towels, but you can certainly use a lint-free, clean kitchen towel), and changing out those towels daily. - May 31st

We recently were gifted a half-gallon of fresh Vermont maple syrup and have been going a bit crazy with recipes containing this sumptuous sap; any excuse to eat it! We have to stress that, when cooking with syrup, it makes all of the difference to cook with real syrup, not the stuff that is commonly hawked on Saturday morning commercials. A lot of the commercial syrup sold isn’t even true maple syrup at all, it’s just high fructose corn syrup.
