One of the things that makes it difficult for some vegetarians to cut out dairy is cheese. In part this is because it’s an easy and tasty source of protein. Our super-easy cheese sauce has 16 grams of protein in a full batch. The other issue is taste, and our cheese sauce is the closest we have come to tasting like actual dairy-based cheese sauce.

Now, we need to tell you right up front that this recipe relies on a pre-packaged vegan cheese powder, Judee’s Vegan Cheddar Flavor, available on Amazon (we’ll give you the link to it below, and it is not an affiliate link). The ingredients in Judee’s cheese powder are maltodextrin, salt, yeast extract, sugar, vegan natural flavor, silicon dioxide, vegan lactic acid, and citric acid. Somehow the combination of these ingredients, in the proportions that Judee’s does it, just really works.

Seriously, this combination and recipe turn out the best vegan cheese sauce that we’ve had. Of course, if you have a different vegan cheese powder you prefer, you can of course try using that (and then please let us know how it turned out!)

The other ingredient is Morinaga Mori-Nu shelf-stable tofu. As we’ve noted elsewhere, Morinaga and their Mori-Nu line created and patented the process by which they make tofu be shelf-stable, packing it into their patented aseptic “Tetra Pak” boxes. They explain on their website that “One major difference between Morinaga Muri-Nu and other tofu in the market today is the award-winning aseptic packaging process. During this packaging process, the food inside is never exposed to light, air, or bacteria, all of which can lead to spoilage. Developed by Tetra Pak of Sweden in 1979, this proprietary packaging is unique. This means Morinaga Silken Tofu offers you the freshest flavor with no sour taste and no bacterial contamination while at the same time assuring you of complete nutrient retention.”

Ingredients

1 box Mori-Nu silken tofu
3 Tablespoons Judee’s Vegan Cheddar Flavor powder
1 Tablespoon water

Directions

Beat, whip, or blend all of the ingredients together. Place in the fridge and chill for at least 1 hour.

*NOTE: We make this in our KitchenAid stand mixer using the whip attachment because we are trying really hard to eliminate plastics from our food preparation, and it worked very well. However, of course, you can also make this in a high-speed blender.
