Here are the things that you will need for this super easy, super yummy recipe: a sweet potato (or sweet potatoes, plural, if that suits your need), vegan butter or margarine, and a heavy pan that heats evenly and can go in the oven (we’ll show you what we use, below). That’s it!
A word about the pan that we use for this recipe
We received a Le Creuset enameled cast iron oval gratin pan as a gift 43 years ago! That thing still looks like new, it’s amazing! Unfortunately, Le Creuset no longer makes this pan in cast iron, only in stoneware, which just isn’t the same at all.

In terms of what vegan butter or margarine you use, that’s up to you. We usually have Earth Balance in the house, but when we want to get fancy we use Miyoko’s vegan butter. Here’s the recipe!
Super-Easy Vegan Oven-Roasted Caramelized Sweet Potatoes
Ingredients
1 or more sweet potatoes, cut in half lengthwise
2 Tablespoons vegan butter or margarine
Directions
Preheat oven to 350°.
Place vegan butter in a heavy-bottomed pan, and place in oven until butter is fully melted.
Remove pan from oven (be careful, it will be hot!) and place the sweet potatoes, cut side down, in the pan. The “cut side down’ is really important, because you want the natural sugars in the sweet potatoes to caramelize from the contact with the hot, buttered pan.
Return the pan to the oven and bake for 1 hour or more, until a fork inserted into the top of one of the halves goes in easily (start checking for this at about 45 minutes, as how long it will take for the potatoes to be fully cooked will depend in part on the size of the potato halves).
Serve cut side up, garnished with either a sprinkling of salt, or a sprinkling of cinnamon, if you like.
