
If you want to give a bit of pizzazz to an ordinary can of black beans, this recipe will only take you a couple of minutes and will utilize a few simple ingredients. There’s no need to go plain when you can make your beans taste this great with a minimum of effort.
Try these beans in vegan, gluten-free tacos, burritos, nachos, or whatever else your heart desires! We used them in our jackfruit tostada recipe, and the flavor was beyond wonderful. They are a protein-rich, perfect addition to a filling autumnal meal.

INGREDIENTS

1 teaspoon olive oil
1/2 cup chopped onions (Any kind will do. We used red onions)
3 cloves minced garlic
1 16 ounce can black beans (undrained)
1/4 cup chopped cilantro
1 teaspoon cumin
1/2 teaspoon sea salt (not iodized, please)
crumbled vegan cheese (optional)
INSTRUCTIONS
Pour the olive oil into a small saucepan and heat. Add the onions and garlic and cook until they become translucent and ever so slightly brown around the edges. This should only take you about 3-4 minutes. Do not burn!
Add the undrained beans, cumin, cilantro, and sea salt. After stirring thoroughly, turn down the heat. Continue to simmer your mixture for 15-20 minutes, continuing to stir as needed. Taste and adjust the spice level to your personal preferences. We like ours spicy, but you may or may not share our sentiments.
Garnish your beans with additional chopped cilantro and some crumbled vegan cheese, if desired. Serves about four ravenous guests, especially when served on tortillas and combined with other ingredients such as jackfruit, vegan crumbles, lettuce, tomato, avocado, and green onions. Go wild and use your imagination!
These beans store easily in a secure container and will keep well in your refrigerator for up to four days. We have never attempted to freeze them, but we are sure it is possible. There’s no point in freezing these beans, however, because they are so delicious! We feel certain that you will agree.
