As we have dedicated our explorations with our new Ninja Creami to lazy vegans everywhere, we have determined to discover as many “dump and freeze” things as we can, giving rise to our “Will it Creami?” series of posts and recipes. Today we are turning our attention to that unsung hero of the tofu world, the shelf-stable silken tofu. We can just hear you now: “Tofu in ice cream??” Yes, our pretties, tofu not only in ice cream, but tofu as ice cream! We promise that it will blow your mind, because it’s actually deeeelicious!

We first tried the Zen brand of vegan pudding cups in our Ninja Creami ice cream maker (and yes they do Creami, very nicely, thank you very much). Actually “ice cream maker” doesn’t do it justice – not at all. The Ninja Creami, and especially the “deluxe” 11-in-1 model, is an ice cream, sorbet, frozen yogurt, italian ice, frozen drink, slushy, milkshake and “creamiccino” maker. But that’s quite a mouthful, so we’ll just call it “Creami”.

As we’ve explained elsewhere, what’s different about the Ninja Creami compared to other home ice cream machines is, well, everything – but primarily it’s that it doesn’t rely on having to freeze any component of the machine. Instead the only freezing that is done is of the ingredients themselves, which you freeze in the Creami containers (think Rubbermaid or Tupperware containers, only the Creami containers have a unique shape so you have to use them). Then the Creami machine basically operates like, well, the best way we can describe it is that it operates like a drill press, first drilling down into the frozen ingredients and then “spinning” the ingredients into a creamy concoction.

And, oh yes, this thing is not quiet. Quite the opposite. In fact, it’s hella loud. BUT you can also just walk away from it while it’s doing its thing, and it’s only for a few minutes in any case.

Anyways, enough stalling, right? You want to know how to make ice cream out of silken tofu! So here you go! Note that the vanilla extract in the recipe is optional because to us it tastes like vanilla ice cream without it! Also note that you can probably make this without a Creami by freezing the ingredients and then dumping them into a high-speed blender but we have not tried this. If you try it let us know!

This is the tofu we use, it’s on grocery shelves, not in the refrigerated section.

Amazing 3-Ingredient Silken Tofu Vegan Vanilla Ice Cream

Ingredients

1 12-ounce box shelf-stable silken tofu
1 cup unsweetened almond milk (may sub other milk)
1/4 cup maple syrup
1 teaspoon vanilla extract (optional)

Directions

Dump everything in a blender and blend until smooth. Pour into the Creami container.

Freeze for 24 hours

Process with the ‘ice cream’ setting of the Ninja Creami.
