Now one of the questions that we often get, and that Butler, who makes soy curls, always gets, is whether soy curls are organic. They are not certified organic, but they are certified non-GMO, and they are “grown without chemical pesticides”. So draw your own conclusions. You will note that we mention lining our air fryer basket with a flattened coffee filter. Do this at your own risk! It works with our coffee filters and our air fryer, but it may or may not work for you. Depending on the configuration of your air fryer, how hot it gets, and your coffee filters, it may be a fire hazard. It works great for us, and it may for you, but it may not, too. You can also buy parchment paper air fryer liners on Amazon.
These yogurt and cornmeal-encrusted soy curls are great for dipping in your favorite dipping sauce, or served alongside fries, or mashed or baked potatoes! But of course, you can serve them any way you like. 🙂

Easy Yogurt and Cornmeal Encrusted Air Fryer Soy Curls Recipe
Ingredients
Soy curls (we usually figure about 1/2 cup dry soy curls per serving, Butler says 3/4 cup dry soy curls is one serving)
Plain vegan yogurt (enough to coat however many soy curls you are going to make)
Cornmeal (enough to coat however many soy curls you are going to make)
Salt & pepper and any other seasoning you like, to taste
Directions
Rehydrate the soy curls by soaking them in hot water for about 10 minutes. Then squeeze as much moisture as you can from them with a clean cotton dishtowel or paper towel.
Put the cornmeal in a low flat bowl, and mix in salt, pepper, and any other seasonings (this lends itself well to Mexican flavors).
Place the vegan yogurt (we use our homemade soy yogurt) in a bowl, and then place the soy curls in the bowl and use a spoon to make sure that all of the soy curls are coated.
Next take one of the soy curls from the yogurt, shake it off if need be (you just want the soy curl coated with a thin layer of yogurt) and roll the yogurt-coated soy curl in cornmeal to coat. Place on a paper-towel lined plate, and repeat with the rest of the soy curls until they are all coated with cornmeal.
Place the soy curls in the basket of your fryer. (Hint: We line our basket with a flattened coffee filter first, which allows the heat and air to circulate but makes for much easier cleanup. But warning: this is an off-label use of coffee filters, and depending on the configuration of your air fryer and how hot it gets may be a fire hazard.)
Air fry at 400° for 8-10 minutes, until golden brown, shaking or turning over (depending on your air fryer) half-way through.
