You’ll Love These Vegan, Gluten-Free Blackberry/Banana Pancakes!

Has this ever happened to you? You check your cupboards for pancake mix, only to discover that you’ve run out. You’re still in your pajamas, so you don’t want to go to the store. There’s no reason to despair, however, because you can easily make your own vegan, gluten-free pancakes with surprisingly few ingredients. No need for store-bought mix!

Our yummy version contains oat flour, blackberries, and bananas, but you can easily modify the recipe for your own tastes. We were so wowed by our creation that we decided to share it with you. You can thank us later.

INGREDIENTS

1 cup oat flour (if you don’t have any on hand, dump a cup of uncooked oatmeal into your blender and whirl it until it’s flour!)
2 tablespoons coconut sugar
1 tablespoon aluminum-free baking powder
1/2 teaspoon sea salt (not the iodized variety, please!)
1 cup coconut milk (or other kind of non-dairy milk — feel free to get creative!)
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
1 small banana, cut into thin slices
1/2 cup blackberries
maple syrup and/or vegan butter or margarine (such as Earth Balance)

INSTRUCTIONS

Mix the wet ingredients in one medium-sized bowl and the dry ingredients in another. Slowly pour the wet ingredients into the bowl with the dry ingredients, stirring constantly to dissipate lumps. Slowly add blackberries and banana slices. A whisk works wonders, but you can also use a spoon.

Your mixture should achieve a nice liquid consistency without being runny or too thick. Add additional flour or milk if necessary, until the batter looks and feels right.

Heat cooking oil in a frying pan. Cast iron is best. We used coconut oil, but you can also use olive oil or another variety. Scoop a couple of tablespoons filled with batter from your bowl and ladle them into the pan. Fry on medium heat. When the top of a pancake begins to bubble, you’ll know it’s time to flip it. Both sides should achieve a lovely brown color. Do not burn!

Place completed pancakes onto plates. Garnish them liberally with maple syrup, additional berries and/or sliced bananas, vegan butter or margarine, etc. You are limited only by your imagination! This recipe serves about four hungry people. You really can’t re-heat pancakes successfully, so you’d better eat them all right now!
