Did we say incredibly easy? It’s easier than that. It’s ridiculously easy. And make no mistake, just because it’s so easy, and vegan, doesn’t mean you are sacrificing taste! In fact, it tastes almost exactly like the tomato soup you remember dunking that grilled cheese sandwich in as a kid! The reason that we say ‘almost’ is because it tastes even better! We call this a vegan Costco recipe because the ingredients come from Costco, and we call this a quarantine recipe because the ingredients are all shelf-stable.

Now, as for your gluten-free vegan grilled cheese sandwich, of course there are all sorts of options there. Our image at the bottom of this recipe features a gluten-free vegan grilled cheese made with the Little Northern Bakehouse gluten-free vegan “wide slice white” bread, which we recently discovered can be bought for $6.25 a loaf if you buy 8 loaves, which is a heck of a price (you can get that here on Amazon), and with the Daiya cheddar slices. We didn’t used to be fans of Daiya (in fact it used to bother our tummies), but somewhere along the way they must have changed something because it works for us now.

Remember how we said that this recipe was ridiculously easy? In fact, perhaps it’s not even right to call it a recipe (let us know what you think in a comment!) On the other hand, after we discovered this way of making tomato soup, we had to share it because there are probably people out there who would never have thought of it. Ok, for this recipe you will need canned diced tomatoes (we get the organic canned diced tomatoes from Costco), and raw cashews (we get the organic raw cashews from… you guessed it… Costco). And, oh yeah, you will also need a blender (ideally high speed like a Vitamix, but you can probably make do with an all-purpose blender). Ok, ready? It took us longer to write this than it will for you to make it! 🙂

The Best, Easiest Vegan Cream of Tomato Soup Recipe

Ingredients

1 can diced tomatoes
1/4 cup cashews
Salt and pepper to taste

Directions

Put everything in a blender and blend until smooth and creamy. If you prefer your soup a little thinner, add a little bit of filtered water at the end.

Pour into a saucepan and heat, or heat in the microwave.

That’s all there is to it! One can of tomatoes makes either one healthy serving, or two smaller servings. The bowl in our picture is one entire recipe.

Now you can make tomato soup any time you like from ingredients you probably already have (or will have) on hand!
