This all started with our protein ‘candy’ squares last month, which were so successful that we decided to try our hand at creating something even more spectacular, and by George, we think that we’ve done it! And we’re pretty sure that you will agree!
Now, following the success of those other protein squares, we decided to order some actual candy square molds (but you don’t have to have molds to make these, read on). We got these silicone molds from Amazon, which contains a set of two molds (identical). Each mold has 126 square cavities measuring a little bit over 1/2 inch square each. Our recipe, below, exactly fills up one 126-square mold (and it can be doubled if you like). We also like this silicone mold, which has 80 squares, each a little over 1″ square.

If you don’t have any molds, and don’t want to wait to order them (or don’t want to order them at all) you don’t have to have molds to make these. We made our protein candy squares by lightly greasing a brownie pan with coconut oil, pouring the batter into the pan, and then just cutting it into squares once it had set. But we do like how the squares turn out when we use the molds.
The squares pop out of the mold so easily!
NOTE: If you are going to use silicone molds like we have, put the mold on a cutting board or something similar before filling it, so you can transfer the mold on the board to the fridge (otherwise it’s impossible to move that floppy mold once it’s filled without stuff spilling everywhere).
We use the second mold to cover the first while it’s in the fridge setting
You will need a blender to make these.
Gluten-Free Vegan Bulletproof Latte Protein Squares
Ingredients
1/2 cup solid coconut oil (we get ours from Costco)
3 Tablespoons chocolate protein powder (we love the No Cow chocolate protein powder, which has the added advantage of coming in a cool aluminum canister with a stainless steel scoop!) (Read about Anne’s hospital stay and why we support No Cow here)
3 Tablespoons Orgain Organic Protein + 50 Superfoods in Vanilla Bean (we get ours from Costco, you can also get it on Amazon here)
2 teaspoons MCT powder (we use the Garden of Life MCT powder)
1/2 to 1 teaspoon instant coffee (we use the organic Mount Hagen brand, which also comes in decaf)
Directions
Put all ingredients in a blender, and blend until very smooth.
If using molds, fill the squares (don’t forget to set it on a cutting board first!), cover, and place in refrigerator until firm. Once the squares have set pop them out of the mold and store in the refrigerator in a covered container.
If using a pan, pour the batter into the pan, cover, and place in refrigerator until firm. Once set cut into squares and store in the refrigerator in a covered container.
